From Ancient Times Till Date: BIRYANI, The All-time Popular Dish

The word ‘Biryani’ is derived from the Persian word ‘Birian’, which means 'fried before cooking' and ‘Birinj’, the Persian word for rice.
There is mention about a rice dish known as “Oon Soru” in Tamil as early as the year 2 A.D. Oon Soru was composed of rice, ghee, meat, turmeric, coriander, pepper, and bay leaf, and was used to feed military warriors.
Some believe that it came from Persia to India by the great Mughals. Others say that it is actually an Indian innovation. It is true that in Mughal kitchen it was modified. Wherever it came from does not change our love for it, right! A plate full of Biryani is a beautiful scene along with its aroma which can make anyone hungry!
There are many legends associated with the evolution. One of the popular stories is related to Mumtaz Mahal, wife of Shah Jahan (on whose name Taj Mahal had been made) . It is believed that when Mumtaz visited the army barracks, she found that they are so weak and undernourished. She ordered to make meal for them with rice and meat . When the meal was served, it was seasoned with other spices.
Some sources say that Biryani was introduced to India by Taimur Long, the Turkish invader.
Biryani was cooked over charcoal in an earthen pot. Today we all have our different versions!
It is so much popular that in 2017, a stamp was depicted with an earthen pot full of Biryani!
For the ages, Biryani has been a part of our life, culture and food habit. Many of the Indian states have their own version of this delicasy but the Hyderabadi Biryani comes first in the race!
